Vibrant Ingredients
  • 6-8 cloves garlic peeled for chopping
  • 3-4 sprigs rosemary fresh, stripped from the stems
  • 4-5 sprigs thyme fresh, stripped from the stems
  • 1/3 cup olive oil
  • 6-8 chops lamb strive to find free-range, grass fed from New Zealand
  • sauteeing oil healthy med/high heat oils include olive, grapeseed, canola, sesame, or use ghee

Method
  1. Preheat oven to 325 degrees F
  2. Finely chop garlic, thyme, and rosemary, then add enough olive oil until a paste is formed.
  3. With your fingers or a silicone brush, press paste firmly onto top and bottom surface of lamb chops.
  4. Season with salt and pepper.
  5. Heat ghee or olive oil over medium heat in a saute pan and brown each side of the chops, leaving undisturbed for the first 2 minutes to allow the crust to integrate into the meat.
  6. Place on a baking sheet and finish in the oven, for approximately 6 to 8 additional minutes
