Lemony Fennel Tuna Salad

This is one of my favorite lunch salads or a 'lazy weekend' snack for when I'm hungry but don't quite know what for. I usually buy a fennel bulb each week as a staple veggie, so this recipe was inspired by my lonely fennel who was begging to be included in the tuna salad. All other ingredients are always kept on hand making this refreshing salad a regular in my weekly rotation. Vitamin C-rich fennel is a crunchy and slightly sweet, adding a refreshing contribution to this dish. Lemon juice, mustard, and english cucumber add a much needed brightness and acidity to dress up a boring can of tuna fish. *Note - Be mindful of the canned tuna fish you purchase. Always read your labels and make sure your seafood is wild-caught, sustainable, and packed with only pure ingredients. For an added grain element, you can always mix in a serving of cooked Quinoa if you have leftovers on hand.

Vibrant Ingredients
  • 1 can tuna fish sustainable, solid albacore in water, no salt added
  • 1 small fennel bulb bulb only, finely chopped, but reserve fronds
  • 1 small english cucumber peeled and finely chopped (english variety has more fresh flavor)
  • 1 lemon juiced
  • 1 tbs english mustard stone ground or dill infused works well
  • 2 tbs Mayonnaise of choice I opt for 'Vegenaise' (grapeseed oil variety) due to added health benefits and yummy flavor
  • 1 tbs dill fresh herb, chopped
  • 1 tbs fennel fronds reserved from bulb and coarsely chopped
  • sea salt pink Himalayan sea salt - seasoned to choice

Method
  1. In a large mixing bowl, mix together the drained tuna fish, chopped fennel bulb, chopped english cucumber, lemon juice, mustard, mayonnaise, fresh dill and fennel fronds.
  2. Season with pink Himalaya sea salt as desired and serve over toasted gluten-free bread (I prefer Udi's brand, its keeps in the freezer, so i end up finishing the loaf before it expires)
