Method
  1. Combine shredded carrot and beets in a shallow serving bowl and toss with a pinch of pink Himalayan sea salt.
  2. Drizzle in the Lemon Tahini dressing to taste and toss until evenly coated. Store unused portion in airtight container in refrigerator for up to 3 days.
  3. Top with raw pistachios and mint before serving.
