Both watermelon and tomatoes are loaded with lycopene, a well-known antioxidant that protects the brain’s high fat content. Lycopene may also play a role in the growth of the brain. Method
  1. Combine cherry tomatoes, english cucumber, watermelon, mint leaves, cilantro, lime juice, lime zest, olive oil, and black pepper in a serving bowl and toss lightly with a fork.
  2. Stir in sea salt just before serving.
  3. Top with feta cheese and pumpkin seeds to serve.
  4. Best eaten the same day it's made. Can be stored in airtight container in the refrigerator up to 1 day.
